Utah 52-70 celery is a classic, light-green color that's sweet, crunchy, and crispy. This variety is ideal for short seasons and small spaces, outer stalks can be harvested at any point after the reaching six inches in height. Or harvest entire bunch at 10-12in. Tips: Celery requires a little extra effort at harvest time but after you've done it once, it's simple and easy. When harvesting entire bunch, use a very sharp knife and cut at the base. Harvest in the morning before it begins to warm up. After harvesting, immediately dip celery into an ice water bath to reduce field heat. Drain before storing.
