Calypso Cilantro is one of the slowest varieties to bolt. It can be harvested after plants have reached 6 inches in height. To extend your harvest, snip the largest outer-most leaves as needed, up to a quarter or third of the plant. This will allow new growth to develop and discourage bolting. Cilantro is delicious in salsa and guacamole, in sauces, or as a topping for pretty much anything. It can also be dried out and used as a spice, commonly called coriander.
